What is a good beef tip potato soup receipe? Or something similiar? please help.?

I want to make a REALLY yummy soup for my bf for his birthday, but he is very picky. He doesn’t like any vegetable, hes kinda meat and potato kinda guy. So I was thinking of making like some sort of beef tip/steak potato soup but I need a good recipe? Ingredients of course would be the beef, any spices he will eat, potatoes and like carrots, I guess, would probably be ok, but not much else. Maybe cheesy as well? Please help, I wanna make him something nice, he is only 26 and his mother just passed away so this birthday is going to be very difficult on him.

once again, the only acceptable vegetable to put in this (minus a spice) would be carrots.

1 onion, 5 celery stalks diced fine, saute in a large pot with garlic & butter until the onion is transparent. Add beef tips to the pan, and brown them off, then add water & diced carrots. Allow this to simmer. Meanwhile boil the potatoes (skin on) in a seperate pot until you can put a butter knife through them, at this point pull them out and refrigerate until cool. Wash the potato pan & boil 1 bag of barley until tender, rinse & set aside. Peel & dice the chilled potatoes then add the barley & potatoes to your soup, bring to a boil & add beef boullion or beef base (base is better) to taste. Skim any remaining fats from the top and discard. Beef Barley Soup, my wife’s favorite!
